Smoked Salt

We recently spent a weekend fishing on the Kenai River in Alaska. Making the most of the day, Mike turned on the smoker and tried his hand at making smoked salt. While the group fished, Mike kept an eye on the smoker. The final product was… well, amazing. Try it out and tell us how it goes! Smoked Salt Ingredients: 2 cups Himalayan Pink Salt, course and unground. Materials Needed: Smoker Alderwood Chips Directions: In a smoker place 2 cups salt on a clean screen. Smoke salt for at least 12 hours, checking it periodically and moving salt around.  Remove after 12 hours. Salt will turn a golden brown color. To store for later use, put smoked salt in a jar...

Miso Salmon

Miso Salmon Simple recipe that packs a delicious punch! 1 filet of Salmon1 part Mayo1 Part MisoBrown Sugar to tasteFresh Thai Basil Heat oven to 375 degrees. Mix all ingredients together except salmon together. Spread mixture atop the salmon filet. Place in oven for about 4-6 minutes. Once it is about halfway cooked (4-6 minutes) reduce oven temperature to 350 degrees and continue baking until salmon is cooked. Enjoy with a side of asparagus! Bon Appetite!

Pesto Scallops Recipe

1 lb scallops Pesto Olive Oil Fresh ground pepper Minced garlic Smoked sea salt Toss scallops in olive oil, garlic and pepper and salt. Sear in a cast iron pan at 600 degrees for 3-5 minutes. Serve right away or chill, place in a serving spoon and top with Pesto. Serves 4

Parmesan-Halibut Cheeks Recipe

1 lb Halibut Cheeks 2 Tbls of Olive Oil 2 cloves of garlic, minced Grated Asiago/Parmesan cheese Rinse halibut cheeks, and place in a Ziploc bag or container to marinade in olive oil and garlic for an hour. Heat a cast iron pan, on an outside grill at high heat. Grill for 5-7 minutes, until golden seared. Sprinkle with Parmesan and Asiago cheeses, cover with a lid until melted. Try prosciutto wrapped asparagus as an accompaniment. Makes 4 servings
